Baking sourdough bread has become my favourite past time. I love it's simple ingredients and it's unique taste. It has been a challenge to finally come up with a recipe that turns out so beautifully. It has a lower glycemic index than store bought breads, no preservatives and limited organic ingredients. With it's longer fermentation period, sourdough offers many health benefits like easier digestion, healthy bacteria and fibre. It's also better for those with gluten sensitivities.
I offer Bread, Ciabatta Rolls and Focaccia at this time, with new products being added as I grow. I also have my sourdough starter available for purchase.

9:30pm (the night before) - Feed sourdough starter
6:00am - Assemble ingredients and hand mix
7:00am the day of - The first stretch and fold procedure to strengthen the gluten
7:30am - The second stretch and fold procedure to strengthen the gluten
8:00am - The third stretch and fold to strengthen the gluten
8:30am - The fourth stretch and fold to strengthen the gluten
4-6 hour bulk ferment (rise)
2:00pm - Pre-shape the dough (work to tighten the dough)
2:00pm - 2:30pm - Let the dough rest
Place in fridge overnight to slow ferment (second rise)
6:00am - Bake
NOTE: My sourdough has absolutely NO preservatives and therefore has a shorter shelf life than store bought bread.
